Update compatibility notes for vSphere 9 and pyvmomi end-of-life
...
pyvmomi 9.0.0.0 supports vSphere 7.x through 9.x. Note that 9.0.0.0
is the last standalone pyvmomi release; future versions will ship as
part of Broadcom's unified VCF Python SDK.

Rewrite README with full metrics reference and compatibility info
...
- Document all metric groups, labels, and descriptions
- Add compatibility table (Zerto ZVMA 10.x, vCenter 7/8, pyvmomi 9)
- Document all environment variables with defaults
- Fix Prometheus scrape config (path is /metrics not /metrics.txt)
- Add Docker image tag reference and quick start examples
- Add changelog entries for 3.0.0 and 3.1.0
